A new patisserie kitchen at Cornwall College St Austell is a sweet treat for learners looking for a career in cookery and hospitality.
Professional Cookery & Hospitality students are benefiting from a large open plan, purpose-built patisserie environment, ideal for creating cakes and chocolate work.
Team Lead for Professional Cookery and Hospitality at Cornwall College St Austell, Steve Rudd, said the idea of “knocking walls down to create an open airy learning environment adjoining our purpose built patisserie kitchen has made a huge impact on our learners experience within their practical sessions.”
“We can now run two classes in conjunction and fit our ever expanding cohorts of learners into a great state of the art training kitchen purpose built for patisserie work,” he continued.
“Purpose built marble inserts align the work tops for chocolate work as well as ceiling sugar lamps for intricate centre piece work and an imported deck bakery oven for bakery sessions.”
There are also conching machines for bean to bar chocolate workshops where learners produce chocolate from its natural seed state.
“Our students are lucky to have an enhanced version of their patisserie kitchen which has been supersized,” he continued.
“I cannot wait to see our learners using the facility at their end of year synoptic tests, where delicate chocolate and sugar work is teamed with skill and knowledge to create stunning centre pieces that will hopefully count towards some excellent examination results.”
Level 2 Professional Cookery student, formally from Penrice Academy, Tom Payne, said all the students feel “very lucky to have these amazing facilities”.
“We are already feeling the benefits of the enlarged kitchen with more equipment and everyone having a thorough opportunity to use it.”
Fellow Level 2 student, Hope Webster, formally from Launceston College, said this is “such a great course, the facilities and lecturers are amazing.”
“I genuinely believe you aren’t going to get a better education than this. The contacts in industry we meet really opens up a lot of doors for us on completion of the course.”
Former Professional Cookery student at Cornwall College St Austell, Zelah Harfood, said “I found my time at Cornwall College St Austell on the Professional Cookery course invaluable.”
“I chose to do the course because I love cooking, baking, patisserie and there were so many resources available to us to learn lots of skills of which I was interested in.”
